Kaun’s rice in weight control

Nowadays instant noodles are becoming popular all over the world and its production is increasing day by day. Because it can be prepared in a short time, at low cost and quickly. But in our country usually wheat, rice, potato, sweet potato are considered as the main raw material for producing noodles. But these ingredients are high in carbohydrates. As a result, they help in weight gain, diabetes and other complex diseases. As an alternative to this, a PhD study has recently been completed at the Shahjalal University of Science and Technology (SHUST) in Sylhet using raw grains that are capable of controlling these diseases and at the same time using climate-adapted grains as raw materials.

The study aims to control body weight gain, diabetes and other complex diseases, as well as to diversify the crop over time and to produce healthier food raw materials at a lower cost.

The main theme of the study was to produce a nutritious noodles with a composite flower made from a combination of rice, wheat, rice bran and mushrooms of the new species Kaun. Where the amount of carbohydrates has been reduced by about 50 percent and the amount of protein, vitamins and minerals has been increased. Which is much more nutritious than ordinary noodles. The use of these noodles as food will be able to control the terrible diseases and physical problems including diabetes, hypertension, hyperactivity and overweight.

On the other hand, as a result of production of these noodles, the demand for Kaun rice production in the country will also increase. In this way marginal farmers will get new speed of their life. This is because it is possible to produce paddy at low cost on land which is not possible to produce other crops due to drought in unused lands and char areas.

The original study was completed in the IFST laboratory. Kaun rice is used as the main raw material in research. Wheat, rice bran and mushrooms are also used. The quality of raw materials is determined by their physical, chemical and functional properties analysis with each of the three types of raw materials. The best variety of raw material is selected for the production of noodles.

According to the research paper, Kaun rice plays a significant role in weight control. It is gluten and sugar free. Each 100 grams of rice contains about 10-12 percent protein, 75-80 percent carbohydrates, 5-6 percent fiber, 2-3 percent fat, 360-390 kcal energy, 30-32 mg calcium, 6-7 mg iron, 350- Other minerals and vitamins are present, including 400 mg of potassium, about 600-700 mg of phosphorus.

Researchers delete the use of Kaun rice as a major ingredient in research. Meherunnahar said Kaun rice has no gluten and is low in fat. Which is most useful for diabetics. Because of its high fiber content, it cleans the stomach and relieves constipation. Adequate amounts of minerals fill the salt deficiency in the body, especially in pregnant women and children. It also has a long digestibility time due to its vitamins and mineral salts, providing energy to the body. Not only that, but in medical science terms gluten-rich foods increase the hyperactivity of many children. Therefore, even in the case of children with special needs, doctors prefer Kaun rice instead of gluten (flour). Nutritionists now call it a ‘superfood’ because of its great health benefits and its significant role in the diet.

Kaun rice, on the other hand, is a crop capable of adapting to the climate. Bangladesh is the most vulnerable country to climate change. So food security in the country is now under threat. As a result, hunger, malnutrition and ill health are increasing day by day. It is important to know the different adaptation strategies to adapt to these adverse climatic conditions. Crop diversity plays a unique role in keeping these strategies free from the harmful effects of climate change. Kaun rice is a crop with complete climate adaptation. In addition, the research paper highlights the benefits of comparing Kaun rice production with other rice production.

Research supervisor FET Professor. Md. Mozammel Haque said that the country’s agriculture is going to be a big problem due to the inconsistency of climate change. Considering these contexts, it is very important to bring crop diversification. Besides, the tendency of overweight diseases including diabetes and hyperactivity is also increasing day by day. Therefore, disease control and simultaneous climate adaptation of grain production has now become a major challenge.

Therefore, there is a need for more research on such crops and he urged the concerned researchers to come forward in this regard.

University Vice-Chancellor Professor Farid Uddin Ahmed said, “Currently, due to the high amount of carbohydrates in our diet, weight gain, diabetes and various other complex diseases are on the rise.” At the same time, as Bangladesh is vulnerable to climate change, the issue of increasing crop production capable of adapting to climate needs to be taken more seriously. In addition, research into climate-friendly crop production and low carbohydrate production is undoubtedly a timely decision.

He further said that the teachers and students of our university are always doing well in research. Our main goal is to advance international standards in education and research. That’s why we always encourage and motivate researchers. This year I have increased the allocation for research 6 times. The front will grow further. We are doing everything we need to do, including infrastructure development in research.
